Early pick to retain natural acidity. Hand-picked grapes packed in small 12 kg. harvest crates. Grapes are processed by gravity in the cellar. Varying degree of the whole cluster vinified with native yeasts. Gentle pump-overs allowed for phenolic extraction from the grape skins. 10-month élevage in stainless (90%) and neutral French oak barrels. Bottled unfined and unfiltered with minute sulfur added after FML and bottling. Light on its feet Mediterranean blend with a textured palate and vibrant fruits.
