Early pick to retain natural acidity. Hand-picked grapes packed in small 15 kg. harvest crates. Grapes processed by gravity. 70% whole cluster vinified with native yeasts. Gentle pumping overs allow phenolic extraction from the grape skins and foulage. Aged 9 months on fine lees in stainless steel tank. Bottled unfined and unfiltered with minute sulfur added after FML and bottling. Cinsault is locally named Samsó. Absolutely classic textured Cinsault with racy and fragrant cherry fruit.
